Even those who hate tuna love this salad. The key is to use Italian tuna packed in olive oil. It is so much more meaty and flavorful than the others. This salad is great with a good loaf of crusty bread or if you like as a nice topping for crostini.

Ingredients
2 cans imported tuna, packed in olive oil
½ tsp. kosher salt or to taste
½ tsp. freshly ground black pepper, plus more to taste
2 (15-ounce) cans cannellini or great northern beans, drained and rinsed
1 medium red onion, thinly sliced
3 ripe tomatoes thinly sliced
3 Tbs. good olive oil
3 Tbs. fresh chopped parsley
2 cloves fresh minced garlic
1 Lemon, juiced
Ingredients
In a large bowl, add the tuna with its olive oil and 1/2 teaspoon each of salt and pepper. Using a fork, break up the tuna into bite-size pieces. Gently toss in the rest of the ingredients and season with more salt and pepper to taste.
